Scrambled Eggs

Eggs are almost always in your fridge and they are so easy to make even for dinner.  They are easily served with toast or in sandwich form or even as a wrap.  Want to kick it up a notch?  Try adding ingredients and making it wow.

Eggs-how many will depend on whether you are making individual servings or making a large pan for others to share. 

¼ - ½ cup crab meat

1-2 Tbsps. almond milk

Old Bay Seasoning, to taste if desired. If you prefer, you can just use salt and pepper.

Heat a medium skillet over medium heat. Whisk together eggs, crab, milk and seasoning.  Spray pan with a bit of oil or melt some butter in the pan and add egg mixture – it should sizzle and start to cook immediately.  Use a spatula to pull edges in towards middle and cook for about 2-5 minutes, stirring occasionally until eggs are cooked as thoroughly as you like.  Garnish with coriander and a bit of extra crab meat if desired. 


Bacon Mushroom Chicken

Start this dinner with a simple salad.  Serve with noodles and honey glazed carrots and rolls for a delicious dinner for two.

2 Tbsps. unsalted sweet cream butter, melted

2 boneless, skinless chicken breast 

1 tsp seasoning salt, I like to use Head Country Seasoning and don’t really measure so do this to taste

2 cloves garlic, crushed 

2 thick slices bacon, precooked if you want crisp bacon 

½ cup mushrooms, halved-more or less to taste

¼ cup heavy cream

Preheat oven to 350°F.  Pour melted butter into a 9x13 inch baking dish. Add chicken and sprinkle with seasoning salt and garlic. Turn chicken over, season again, and lay bacon strips on top. Sprinkle with mushrooms.  Bake in preheated oven for 45-60 minutes, or until chicken is no longer pink and juices run clear.  Remove chicken, bacon and mushrooms to platter and keep warm. Pour juices from baking dish into small saucepan and whisk together with cream over low heat until thickened. If it’s not as thick as you like it, you can use a bit of cornstarch or flour to thicken it more.  You can also use more cream if you want more sauce.  Pour sauce over chicken and serve warm.

Mexican Chicken Legs

6 chicken legs, adjust accordingly for how many you need

1 pkg dry taco seasoning

1 cup shredded Mexican cheese

Remove skins from chicken legs.  If you prefer skin on your chicken legs, this step can be skipped.  Rinse chicken legs with cold water and pat dry with paper towels.  Spread taco seasoning on large plate.  Roll chicken legs in taco seasoning until coated.  Place chicken legs on a microwave roasting rack in a circle.  Make sure the fat part is turned toward the outside.  The chicken should be arranged to look like the spokes on a bicycle wheel.  Cover chicken with parchment paper.  Microwave chicken for 8-11 minutes. They are done when juices are clear when chicken is pierced with fork.  Sprinkle chicken legs with shredded cheese.  Return rack to microwave for 30-45 seconds to melt the cheese.

Nacho Fries

The great thing about this recipe is you can ‘load’ with anything you really want to.  Do you have pulled pork left over from a cookout? Maybe you have leftover turkey or ham? Use it to turn fries from a side dish to the main course!

You can either prepare your own fries using a recipe above or buy your favorite frozen variety.  Think about 2-4 cups per person depending on how much everyone eats.

Ground beef

Onion, diced

Taco seasoning

Peppers if desired

Mexican blend cheese (or Italian or cheddar or whatever you are in the mood for!)

Chives, tomatoes, jalapenos etc. for topping

Prepare fries as desired.  While your fries are cooking, brown ground beef with onion.  Drain and add peppers.  Cook for another 6 minutes.  Line baking sheet with parchment paper and preheat oven to 375°F.  When fries are ready, season as desired and place in a single layer on prepared baking sheet or oven safe plates as individual servings.  Top with ground beef and cheese.  Bake for 5 minutes or until cheese is melted.  Remove from oven and top with chives, tomato and jalapenos if desired. Serve directly from baking sheet or just be careful with hot plates.


Easy Dog Biscuits

2 2 ½ oz jars turkey baby food

1 2 ½ oz jar beef baby food

½ cup powdered milk plus 1 Tbsp.

¾ cup plus 1 Tbsp. wheat germ - I get mine from Reasor’s in Tulsa.  BUT if you don’t want to travel just to pick up one ingredient, ground flax seed can be used as an equal replacement.  That can be found at Wal-Mart with all the flours.  

Preheat oven to 350°F.  Line baking sheets with parchment paper.  Mix all ingredients together and drop by spoonful onto prepared cookie sheet.  Bake for 12 minutes.  These are a soft treat and great as an alternative if all you give your dog are hard treats or if your dog is older and the hard treats are too hard on their teeth.  Store in airtight container in refrigerator once completely cooled.
