Cooking with Kids

Pita Pizza 

This recipe is super easy for kids to put together themselves.  If they are old enough to chop themselves, you can easily get whole vegetables.  If they are still too young, almost all ingredients can be found pre-sliced or diced or you can dice them yourself.  The oven temp is low enough they should be able to slide it in the oven themselves as well.  

Pita bread (how many you need will depend on how many are eating)

Pizza sauce

Italian blend cheese

Pizza meat as desired

Any additional toppings, as desired, like olives, peppers, onions, etc.

Salt and pepper or other seasoning as desired, to taste

Preheat oven to 200°F.  Line baking sheet with parchment paper.  Place pita bread onto prepared baking sheet.  Spread pizza sauce over base of each pita.  Sprinkle with cheese.  Add meats and any other toppings.  Season to taste.  Bake in preheated oven for 15-20 minutes or until cheese is melted and pizza is heated through.

Note: kids love pizza.  Change the bread up and use a baguette or bagel or even hoagie rolls.  It will have to cook longer, but there are so many options when it comes to homemade pizza.


Easy Eggs

2 eggs

1 Tbsp. milk

Pepper to taste

Cheese to taste

Lightly spray or butter a microwave safe bowl or mug.  Add two eggs, milk and pepper.  Lightly whisk with a fork.  Microwave on high for 30 seconds.  Stir and microwave for another 30 seconds.  Repeat twice more and they should be done.  If needed microwave 15-20 seconds at a time. Top with cheese and enjoy. 


Fruit and Cheese Kabobs

2 cups fresh strawberries, halved

2 cups red grapes

3 kiwis, quartered

8oz cheddar or Monterey jack cheese, cubed

12 wooden skewers

Thread fruit onto skewers in an alternating pattern.  You can easily add pineapples, bananas, watermelon and cantaloupe.  The possibilities are endless.  This is a healthy snack and so easily customizable to your kid’s tastes.  AND the kids and do it themselves!


Crab Wraps

None of this actually requires cutting if your kids are too young for knives.  You can get pre-diced green onion and the crab can easily be torn with fingers instead of chopping.

1 8oz package cream cheese, softened

¼ cup cocktail sauce

1 8oz package imitation crabmeat, chopped

¼ cup shredded Italian blend cheese

¼ cup chopped green onion

4 flour tortillas

½ cup additional cocktail sauce for dipping if desired

In a medium bowl, mix together the cream cheese and cocktail sauce until well blended. Stir in crabmeat, cheese and green onion. Spread about 1/2 cup of the mixture onto each tortilla, and roll up tightly. Wrap each tortilla in plastic wrap, and refrigerate overnight for lunch the next day or enjoy immediately.  You can also make pinwheels out of these if you refrigerate overnight.  Just cut the next day into 1 inch slices.


Walking Taco

If the kids are too young for the stovetop cooking, make the ground beef the night before and let them put their tacos together for lunch the next day.

Single serve bag of Doritos, you can also use Fritos or any other small bag of chips you prefer

2lbs ground beef

Taco seasoning

¼ cup water

Toppings of choice, we like sour cream, diced onion and tomato and shredded cheese.  You can also add olives, shredded lettuce, salsa, diced peppers, etc.

In a medium skillet, brown ground beef.  Drain off grease.  Add taco seasoning and water and stir to combine. Open bag of chips of choice.  Add ground beef and other toppings and eat with a fork or spoon.  So easy!


Easy Mac and Cheese

1 box or bag of your favorite pasta shells. My favorites are rotini spirals because they have lots of extra space for the cheese to cling to OR small shell pasta. What is not to love about a pocket that can end up with extra cheese in it!

1 cup milk or more as needed for creaminess 

1 Tbsp. unsalted sweet cream butter

2 cups cheese of choice, I use American sliced cheese-it’s how my family has done it for YEARS

Salt and pepper, to taste

Boil water in large pot on stove.  Add pasta and cook according to package instructions.  Typically you are going to cook the pasta for about 15 minutes.  Test pasta for desired consistency.  Drain water from pasta.  Return pasta to pot or large bowl.  Add milk, butter and cheese and stir well until cheese is melted and well incorporated.  Taste and adjust if needed.  Enjoy!
